This blackberry ice cream is easy to make since you don’t need an ice cream churn. This recipe is perfect for any gathering and is one of our summer favorites.

❤️WHY MAKE THIS ICE CREAM
It’s only a few simple ingredients and is easy to make. If you have many fresh blackberries or love blackberry recipes as we do, this is a great way to enjoy them. Plus the best reason is you don’t need an ice cream churn! You can make this one day, let it freeze overnight, and enjoy it the next.
🍴KEY INGREDIENTS
Fresh Blackberries – We have an abundance of blackberries every year, and we always love making this ice cream.
White Granulated Sugar – of course, you need sugar.. Ice cream is sweet!
Condensed Milk – This gives it a great texture. Did you know all condensed milk is “sweet” and you can make your own? Here is a great recipe for making your own.
Heavy Whipping Cream – This gives it that wonderful creamy texture.
Vanilla Extract – You will want this to go with the flavor of the blackberries.

SWAPS
You can use frozen blackberries in this recipe. You can also lessen the sugar if your blackberries are sweet.
You could also use this as a base recipe to use other fruits. Blueberries would be delicious and great ice cream.

🍽️HOW TO MAKE
This ice cream is easy to make and won’t take long to throw together. The longest part of the whole process is waiting for it to freeze.
STEPS
Step 1
Combine the 3 cups of blackberries with the sugar and mix to sweeten the berries. (You could use less sugar if your berries are sweet) Mash 2 cups of the sweetened berries with a potato masher and set the other cup aside.
Step 2
Mix together the condensed milk and vanilla with a spoon in a separate bowl and set aside. Whip the heavy cream with a mixer until stiff peaks form. Fold in the milk and vanilla with a spoon.
Step 3
Add ice cream mixture to a loaf pan or 2 quart container and swirl in the mashed blackberries with a knife.
Step 4
Fold in the remaining cup of whole blackberries with a spoon. Freeze at least 6 to 8 hours or until the consistency you like. We cover it when putting it in the freezer. Makes about 1 1/2 quarts.
⭐TIP
Let ice cream sit out a few minutes before serving. It will be very hard. We left some of the berries whole to put on top for the photo but you do want them mashed up as they are hard to eat and don’t thaw as fast as the ice cream.
Dip your ice cream scooper in water when scoping out ice cream, it will be much easier.
RECIPE VARIATIONS
You can make this with other fruits and I do think blueberry would be delicious. You wouldn’t have to really mash the blueberries up, maybe just slice them. You can also try our Cherry Cheesecake Ice Cream or Pineapple Cheesecake Ice Cream.
WHAT TO SERVE WITH
So many people are a big fan of ice cream and waffles and these sourdough waffles would go great with this recipe.

❓FREQUENTLY ASKED QUESTIONS
We don’t own an ice cream churn so I can’t advise, however, if you have made lots of ice cream in yours, I am sure you will be able to adapt this recipe.
No you can’t, because evaporated milk isn’t sweetened and condensed milk is, so you MUST use condensed milk in this recipe.
STORING
We never have any leftovers since it’s FRESH ice cream, but if you do, cover it and put it back in the freezer. It will last in an airtight container for about two weeks.

SERVING SIZE
This makes about 1.5 quarts. You could easily double this recipe for a larger group. If you did want to double this recipe you could make one with blackberries and one with blueberries. This is a great recipe to be creative.

- 3 cups fresh blackberries My blackberries were so large it only took 3 cups. If your berries are small, you might want to use 4 cups
- 2/3 cup white granulated sugar
- 1 (14 ounccan sweetened condensed milk
- 2 teaspoons vanilla extract
- 2 cups heavy whipping cream

I see no reason why you couldn’t use frozen berries in this recipe and you can use this with just about any fruit to make no churn ice cream
