Plus, most of us have only heard of cobbler as dessert like Blueberry Cobbler or Peach Cobbler! So curiosity plays a large roll here too! In essence it’s a lot like a Chicken Pot Pie but with a biscuit top!

Ingredients / What You Need

Part of the beauty of this recipe is that it the ingredient list is short. There’s nothing worse than a complicated dish when you are trying to feed your family on a busy night. You only need 7 things, making it an classic “semi-homemade” dinner.

  • Butter. I use salted butter in this recipe, and you will need to melt it because it doubles to ensure your dish doesn’t stick to the pan. You can melt it in the 9×13 pan while the oven is preheating to save having to wash another dish, or simply melt it in a bowl and pour it in the pan.
  • Chicken. The easy answer here is to use a rotisserie chicken. They usually give you about 4 cups of meat, which is what you will need for this dish. It doesn’t have to be exact. But you could also make baked chicken and cube it, or make homemade shredded chicken too!
  • Frozen Vegetables. I used a bag of mixed veggies, but of course you can use any type you would like. I wouldn’t recommend using frozen broccoli though, as it can release a lot of moisture and ruin the consistency of your casserole.
  • Cheddar Bay Biscuit Mix. This can easily be found in most supermarkets, or even on Amazon. If you just can’t find it you can use any biscuit mix, even Bisquick. you will just need to add in some more salt, pepper, or seasoning to add to the flavor!
  • Milk. You can use 2% or whole mix in this recipe. You mix it directly with the biscuit mix to create a very thin batter to pour into your pan.
  • Chicken broth and cream of chicken soup. I use 1 cup of chicken broth and 1 can of soup. I prefer this consistency as it bakes. I’ve seen many recipes for chicken cobbler that use more liquid and it creates a “looser” casserole with more gravy, as opposed to a more biscuit-y dish, still with gravy, just not quite as much.

Tips When Making Chicken Cobbler

  • Amount of Liquid Added! I hit on this above, but I have seen many version of this recipe with varying amounts of broth added. What the broth does, while absorbing into the biscuit mixture is it creates a gravy along with the condensed soup.
  • Bake Time! This is another recipe point I have seen version of. Some bake their cobbler at 400°F for 45 minutes – 1 hour. I bake mine at 375°F for about an hour which seems to work great. Note that all ovens bake a little differently, so you might need to add (or subtract) a bit of time! The most important part is that the cobbler is golden brown across most of the top, while still being SLIGHTLY jiggly in the center.
  • How To Know When It’s Done? This part can be the only mildy tricky part of this recipe. You want the biscuit to be baked but the center to be slightly loose. Think of it like a cheesecake. The center will have some movement, this ensures you get the gravy and the biscuit doesn’t absorb all the liquid. If you happen to over-bake it trust that it will still taste delicious, you just won’t have quite as much gravy!
  • Rest Time! Allow the cobbler to sit for 10 – 15 minutes before serving. This time will allow the gravy to soak into the biscuit slightly without being too soupy, and also no one want to burn their mouth!

Chicken Cobbler Variations

The beauty of this recipe is that it is absolutely perfect as-is. BUT you can use it as a base to get creative with flavors and seasonings. Here are a few ideas that I have tried and some I haven’t but that sounds delish!

  • Add cheese! Doesn’t cheese make everything better? A cup (or two) of shredded cheddar on top of the veggie layer before you add the biscuit mixture will bake in perfectly and really enhance the creaminess of the dish!
  • More seasoning! You can add lots of different spices to this chicken casserole. Season up the chicken with thyme or garlic powder, Add seasoned salt, or garlic and pepper to the biscuit layer to really enhance the biscuits, or even throw in some Old Bay to the biscuit mixture!
  • Try a different protein! One reason I love this recipe is the easy prep, but you can also cook up some ground beef or turkey, season it with taco seasoning, use corn only and make this more or a tamale-style Tex-Mex casserole! The possibilities are many!

How To Store

  • In the Refrigerator: Store airtight in the refrigerator for up to 3 days. Reheat portions in the microwave!
  • In the Freezer: Freeze this casserole after it is baked. Allow it to cool completely, then cover airtight and freeze for up to 2 months. Allow to thaw in the refrigerator. To reheat the entire casserole, bake the thawed cobbler at 350°F for 30 minutes, or until the internal temperature reaches 165°F.

Description

This easy chicken dinner is a family favorite and so quick to make! You can get creative with seasonings and make it your own!


  • 1/2 cup butter, melted
  • 4 cups cooked chicken (I like to use rotisserie for ease)
  • 1 (14- ounce)bag frozen mixed vegetables
  • 1 (11.4- ounce) box Cheddar Bay Biscuit mix
  • 2 cups milk
  • 1 cup chicken broth *see note
  • 1 (10.5- ounce) can cream of chicken soup


  1. Preheat your oven to 375°F.
  2. Pour the melted butter in the bottom of a 9×13 baking dish.
  3. Layer the chicken on top of the butter. Then evenly layer the frozen vegetables on top of the chicken.
  4. In a large bowl whisk together the biscuit mix (with the seasoning packet) and the milk until mostly smooth. Some small lumps are fine. Pour this mixture on top of the vegetables.
  5. In the same bowl whisk together the chicken broth and the cream of chicken soup. Pour this mixture on top of the biscuit mixture.
  6. Bake for 1 hour until golden brown and the center is almost set, but still a little loose. If you over-bake this you won’t be left with a lot of “gravy”, but it will still be good.
  7. Allow the dish to cool for 10 – 15 minutes before serving.


Notes

* I have seen this recipe using up to 2 cups of broth, but I prefer a more biscuit-style casserole instead of a looser casserole with more “gravy”.

Store airtight in the refrigerator for up to 3 days.
